

Ingredients
- 1 tablespoon olive oil
- 3–5 zucchini, spiraled (zoodles)
- 1/2 teaspoon kosher salt
- 1 tablespoon sambal oelek paste
- 2 teaspoons mirin
- 1 tablespoon ponzu
- 1 tablespoon sesame oil
- 1 cup bean sprouts
- 1 sprig of scallion, diced, white and green parts separated
- 5 basil leaves, shredded (optional)
Directions
Line a large plate with paper towels. Heat the olive oil in a nonstick pan. Stir-fry the zoodles until they soften, 3 to 5 minutes. Place on the paper towel and sprinkle with salt. Allow the salt and the oil to drain from the zoodles as they cool to room temperature. Make the dressing by whisking sambal oelek, mirin, ponzu, sesame oil, and white parts of the scallion. Divide the zoodles and bean sprouts between two bowls. Pour half the dressing over each bowl and mix lightly. Sprinkle with green parts of the scallions and the shredded basil, if using. Serve immediately.

Healthy Hawaiian Pizza
Ingredients
- 12-inch Cauliflower Pizza Crust, homemade or store-bought
- 1 tablespoon olive oil
- 4 ounces Canadian bacon, cubed
- 3 ounces pineapple chunks, cubed
- 1/2 cup store-bought pizza sauce
- 1 cup shredded cheese (combination of fontina, white cheddar, and Parmesan)
- 4 ounces fresh mozzarella, sliced in circles
- 2 sprigs of scallion, white and green parts, chopped
Directions
Bake the crust (p. 164); if store bought, bake according to package instructions. As soon as the crust is baked and removed from oven, preheat it to 500 degrees. Heat the oil in a nonstick pan and sauté the bacon for 60 to 90 seconds until the edges begin to brown. Using a slotted spoon, remove to a bowl or plate lined with a paper towel to absorb excess grease. In the same pan, sauté pineapple chunks for another 60 to 90 seconds until the edges of the pineapple begin to brown. Add to the bowl with bacon. Prepare the baked crust. Using the back of a spoon, spread the pizza sauce from the center in widening circles until all but the edge of the crust is coated. Spread the cheese evenly over the crust. Top with a layer of mozzarella slices, followed by a layer of bacon and pineapple, spacing them evenly throughout the crust. Return the pizza to the oven and bake for 12 minutes. Turn on the broiler and broil for another 2 minutes. Remove from the oven, sprinkle with scallions, slice into serving pieces, and serve immediately.

'The Dubrow Diet' Cocktail
Ingredients
- Titos Vodka
- 1 tsp Watermelon juice
- 1 tsp Grapefruit juice
- 4 oz Soda water
- Ice cubes
Directions
Add splash of grapefruit juice, and 1 splash of watermelon juice to 4 oz of soda water and 2 oz of vodka served over ice. Mix/stir together and garnish drink with fresh watermelon wedge
